I did some good old meatball cooking last weekend – bachelorhood for 2 days. I thought I would avoid the lean cuts and just enjoy the fat.All good news.Cheaper – I have my spendthrift side.No added oil required as the saturated fat provides the cooking medium. Here we have been conned by the Heart Association and Dieticians once again about lean meat and then cooking with a polyunsaturated seed oil. :(The Japanese love their Wagyu beef with all of its marbling of fat. The only issue there however is that the marbling comes from a diet high in grain. That meat has a higher Omega 6 fatty acid component and that is proinflammatory. Stick with the local pasture fed meats.
